Dreams of Blueberry Brioche French Toast

The other night I dreamt of blueberries and brioche. Ever have a dream about a certain dish? Well- confession. I do… all the time. I actually have a notebook full of mostly coherent recipes and thoughts that sits at my bedside table, ready for when the inspiration strikes. I am fascinated with how the mind works, and apparently mine tends to create even while sleeping.

I live for a good brioche, but have found it hard to find one that is gluten-free. However, I am very happy to report that you can find a delicious one at Trader Joe’s. This recipe takes almost no time to throw together and that added oat streusel topping really just gives it the extra shine that it needs.

Oat Streusel Topping

Directions

  1. Spray a 9 x 13-inch casserole dish with cooking spray.
  2. Cut the brioche into 1-inch cubes and place the cubed bread into the prepared pan.
  3. In a large bowl whisk the eggs until well beaten. Add in the milk, cinnamon, brown sugar, vanilla and salt. Vigorously whisk all ingredients together until completely combined.
  4. Pour the egg mixture evenly over the brioche cubes. Cover with plastic wrap and refrigerate for at least 4 hours or overnight (up to 12 hours).
  5. Prepare the topping: In a large bowl, stir together the brown sugar, flour, cinnamon, and salt. Use 2 forks to cut the butter into the dry ingredients until small clumps are formed. Gently stir in the oats. Place the topping into a sealed container and refrigerate until you’re ready to bake.
  6. When you’re ready to bake, preheat the oven to 350. Remove the dish from the refrigerator and evenly sprinkle on the topping.
  7. Bake for 45-50 minutes or until the top of the casserole is golden brown and the french toast is firm.
  8. Optional, but highly recommended topping: drizzle with maple syrup and sprinkle some confectioner's sugar on top.

Notes:

If there are any leftovers, cover, seal and store in fridge for up to 2 days.
